Crostini di Carcioffo e Tonno
Crostini of Artichoke and Tuna
Ingredients
1 slab of day-old focaccia
1 jar of Tonnino tuna filets, or equivalent high quality Italian tuna in olive oil
1 jar of Cucina & Amore artichoke bruschetta, or similar jarred artichoke spread
Tutto Calabria or other Calabrian chili-infused olive oil
Directions
The day before, leave fresh focaccia in a bag on the counter to dry slightly.
Cut the focaccia into two halves, and then split each in half lengthwise.
Brush the inside of the focaccia with olive oil and set on a wire rack under a broiler to toast lightly.
Once lightly toasted, remove from under the broiler and let cool.
Cut the focaccia into 3-inch squares.
To each square, spread about 1 tbsp of artichoke spread
Top each square with a filet of tuna, kept whole if possible (not flaked)
Dot with Calabrian chili oil
